Pan-seared salmon over green beans, new potatoes, soft eggs, olives, and capers with a whole-grain mustard dressing. The Niçoise, elevated.
Potatoes 15 minutes, beans 3 minutes in salted water. Keep beans crisp — ice bath immediately. Toss warm potatoes in dressing.
7 minutes at a gentle simmer. Ice bath, peel carefully. The yolk should be set at the edge but jammy in the centre.
Season skin-side. Hot pan with oil, skin side down 4 minutes until crispy. Flip, 2 minutes. Rest 2 minutes. Should be pink in the centre.
Arrange each element in separate clusters. Place salmon on top. Halve eggs and arrange cut-side up. Drizzle dressing. Do not mix until serving.
